The extra-virgin olive oil of the Azienda Agricola Bisceglia is the result of a centuries-old tradition of olive trees and fruit pressing. Today the right balance between traditional knowledge and technological innovation creates an extra virgin with undisputed quality. The olives used come only from the estates of the farm. On these fields the Gargano olive trees have been cultivated since 1857, protected secular plants so that they can continue to exist. Once they have reached the right level of ripeness, the olives are harvested and pressed within 24 hours at the family mill. It is the attention paid to every single step of the production process that has allowed us to guarantee a product that tells the ancient traditions of the culture of Gargano, or rather “Mattinatese”. The scent of freshly pressed olives, the intense green color with golden hues, and the bitter-spicy taste are the main characteristics of this extra virgin that enhances all the best features of the Apulian cultivars.
